I love this question, but I usually give myself 10 cars instead of 5. If I can only pick 5 I'd go with (in no particular order):

Lamborghini Diablo
McLaren F1
BMW Isetta
BMW 850
Bentley Continental GT

I made a realistic dream car list.

1. My current E34, because I paid for the car myself on a poorer-then-a-homeless-person college budget, and maintained it the proper way :)
2. 1969 Camaro Z/28 with a 302 (a real Z/28).
3. R33 Nissan Skyline N/A or FI, no preferance
4. Ferrari Testerossa
5. Porsche 911 Turbo from the 80's.

2) BMW M1 (perhaps the most visually stunning car ever built)
3) Ferrari 430 Spyder WITHOUT F1 tranny (for drivers, not poseurs)
4) Lotus Super 7 (replica OK; "add lightness" and have fun)
5) Bentley Continental GTS. (just because I like it).
